Sunday already?

Is it just me, or did this weekend fly by? I didn't really do anything at all besides random things around the house and a lot of lounging, but I still felt like the weekend went by SO fast. I spent the morning drinking coffee and finishing up my grocery list and menu. I am making a few new things this week, but things I know Jon and I will like. I do not want to repeat last week's menu fiasco.




This week's menu

Monday: Salsa verde chicken and dumplings & side salads or green beans
Tuesday: Creamy potato soup & side salads
Wednesday: Stuffed shells with turkey and artichokes & side salads
Thursday: Shrimp scampi with thin spaghetti and broccoli
Friday: Chili & cornbread casserole
Saturday: At a wedding!

Ridding my body of carb and sugar overload

At some point during the holidays my body starts craving fruits and vegetables (thank God for large bags of clementines!). Therefore, I picked up a couple new cookbooks with a Barnes & Noble gift card I got for Christmas. They are Everyday Food: Fresh Flavor Fast and Everyday Food: Great Food Fast. I got them for 2 reasons: 1) They were buy one get one 50% off and 2) I flipped through them and the recipes looked healthy, fast and flavorful. Plus I am always looking to try new foods! Here's my menu for the week based on the Fresh Flavor Fast cookbook. I like that one because it divides the recipes into seasons so you can get ideas for how to incorporate the season's freshest produce into your meals.

Sunday: Cod with fennel and potatoes & a mixed green salad (arugula, frisee, radicchio) with citrus dressing
Monday: Chicken with prosciutto and sage & a fennel, orange and parsley salad
Tuesday: Lentil soup & green salad with lemon parmesan vinaigrette
Wednesday: Potato and onion frittata & leftover salad ingredients
Thursday: Roast beef with shallots and roasted potatoes & lemon-thyme green beans
Friday: Leftovers or out
Saturday: Baked ravioli & broccoli with orange sauce

Menu Plan...Saturday.

I know most post their menus on Mondays, but I was thinking about it now so I'm posting it now. It's been a long time since I've made a menu and really need to get back to doing it every week. It definitely helps with organization and cuts down on us grabbing food out because there is nothing at home.

Last night: Cheesy baked tortellini (I used leftover pasta sauce with meat in it) and salad
Saturday: Out (we allot ourselves one night out each week)
Sunday: Pot roast with vegetables and biscuits
Monday: Potato soup and salad
Tuesday: Tacos, refried beans and Mexican rice
Wednesday: Stuffed shells and salad
Thursday: Chicken, butternut squash risotto, and vegetable
Friday: Pizza or leftovers
